Two years ago, cooking boffins sought to answer the question most likely to cause a café riot - do you add milk immediately after pouring, or just before you drink?
The team at Modernist Cuisine found that adding milk slowed down the coffee's cooling by 20%, so should be added straight away.
Perhaps more interesting is the footage they took to illustrate the experiment, filmed at 2000 frames per second.
